The Heathen Homemaker’s Weekly Meal Plan 2016
Week 03: 01/17/16 – 01/23/16

We’re getting back into the swing of things after the craziness that is December in the United States. The kids are back in preschool, hubby is back at work, I’m taking slightly less Xanax than usual.

I don’t currently have a membership at Costco, but my bestie does, and last week I found a great deal on already-peeled-and-chopped butternut squash, so I definitely wanted to incorporate that into this week’s meal plan. It’s also gotten quite cold here in central North Carolina, so I wanted some cozy meals.

This week

Sunday – chicken burritos, rice, beans
Monday – Pintos in the Crockpot[1], Grilled Sausage, Sauteed Cabbage, Cornbread
Tuesday – Meatball Sliders, Homemade Fries, salad
Wednesday – curried butternut squash soup (from the cookbook Good & Cheap*), pork chops, rolls
Thursday – Chicken soup, rolls, salad
Friday – cobb salad or leftovers
Saturday – pork adobo [2], rice, green beans, salad

[1] I’m not following a particular recipe. I’ll probably throw some chopped onion, fatback or pigtail, and whatever seasonings strike my fancy into the crockpot with dried pinto beans and chicken stock. This is pretty close to the method I use but I don’t bother with the soaking.
[2] My first husband was (well, is. He’s not dead!) Filipino. Chicken or pork adobo was and is a standby in my kitchen. It seems there are as many ways to make it as there are families who make it. I lightly brown chunks of chicken or pork in a big pot and then add a bay leaf, some whole cloves of garlic, and some peppercorns. Then I pour over equal amounts (usually about a cup of each) of soy sauce and rice vinegar. I never measure, so I don’t quite know how to quantify “some”. I bring it to a boil and then let it simmer for an hour or so.
