The Heathen Homemaker’s Weekly Meal Plan 2016
Week 15: 04/11/16 – 04/17/16

Last week was a crazy busy week and I ended up scrambling and substituting on our meal plan a lot. I’ve done a meal plan every single week for many years. I’ve been recording all of our meal plans in a giant spreadsheet for nearly three years. One of the advantages of of that is that I have a huge repository of meal ideas with links to recipes. If it’s 4pm and I realize I was supposed to make a crock pot meal, I can glance at my meal plan and figure out how to switch things up. Doing that has saved us lots of take-out money over the years. I still do call hubby at 5:30 sometimes and beg him to bring home Chinese food, but not nearly as often as I used to.

This week

Monday – Thai peanut chicken, rice, stir fried broccoli
Tuesday – Pesto spaghetti, grilled chicken
Wednesday –Teriyaki apricot pork chops, leftover rice, stir fried veggies
Thursday – Vegan Night![1] Sofrita bowls
Friday – Spaghetti squash with bacon, spinach & goat cheese, salad, garlic bread
Saturday – Hodge podge or homemade pizza, depending on how tired I am
Sunday – Roasted chicken[2], carrots, potatoes, salad

[1]  If you seriously can’t deal with tofu or can’t live without meat for even one nigh you could always substitute grilled chicken or something.
[2]Throw that bad boy into the slow cooker (this* is the one I use for dishes like this because the oval shape works best), rub some herbs and spices on it (or don’t) and cook it on low all day. Done! Make everyone save their bones, take the rest of the meat off the carcass after dinner and you’re ready to make some broth.
