The Heathen Homemaker’s Weekly Meal Plan 07/19/15
It’s a slow-cooker kind of week.
I use my slow cooker a lot – at least once a week – but sometimes I go on a total slow cooker binge.
This is going to be one of those weeks. My all time favorite source for slow cooker recipes is Stephanie O’Dea’s A Year of Slow Cooking, so a lot of the recipes are straight from her site.
Next week I’ll compare my planned menu with what we actually ended up eating. There is generally at least one night during the week when I say “fuck it. I want some Chinese takeout.” Sometimes there are five nights like that in one week, but hopefully this won’t be one of those weeks!
Here we go!
Sunday – Butternut squash soup [1] and fancy-ass grilled cheese sandwiches (a.k.a. grilled pimento cheese [2])
Monday – Chicken enchilada soup (thanks to my friend Leah over at The Frugal South for turning me on to this fabulous enchilada sauce recipe!)
Tuesday – Jenny’s Infamous Mark-Down-Meat Slow Cooker Curry, rice, naan
Wednesday – chicken & rice casserole along with some sort of Trader Joe’s frozen veggie chosen at random from the Big Freezer in the basement pantry
Thursday – Fish in foil, sauteed summer vegetables [3], and a salad if I get around to it
Friday – Mexican breakfast casserole, salad
Saturday – We’re going to a baseball game that night, so I imagine we’ll spend $130 at the stadium on 4 hot dogs and a bag of popcorn
